i feel like i am doing this wrong but ok...
My question:
Why is Willy unable to accept Charlie's offer for a job when he is ok with taking money from him on a weekly basis?

That's a good question!
I think it might be because Willy Loman was so stubborn, that he only wanted to work for that specific company. I don't think Willy Loman is very intelligent at all, and I don't think he understood why he got fired from his old job, but he was so loyal to his old company that he didn't want to work for another.
